The building of our micro dairy at our home in Marlow was completed in the summer of 2016 and our first cheese 'Cygnet' - soft, young and fresh - has been very well received. You can find us at local Farmers markets and look out for Cygnet on your restaurant menu.
Cygnet caters for a range of tastes - at 2 weeks old it is a young, fresh citrus cheese, then from 4 weeks old it starts to ripen from the inside, tasting creamy with an after-taste similar to a strong French cheese. Cygnet matures up to 10 weeks old.
Our second cheese, scheduled for early 2017, will be 'Bucks Blue', with a third variety, 'Regatta' to follow.
