20 Nov 16 - Stages of Cygnet
Cygnet at 2 weeks 4 weeks and 6 weeks old, starts off life as a young fresh citrus acidic cheese, texture like a goats cheese, from 4 weeks old it starts to ripen from the inside, taste is creamy at first then with a definite strong aftertaste like a good french 'smelly' cheese, and matures up to 10 weeks old.
05 Aug 16 - Cheese vat now installed
Our cheese vat arrived Wednesday 3rd August and we finally installed today, great piece of German engineering, cant wait to start perfecting our Cheese's, our first one will be a soft lactic cheese, we are thinking of a cheese board size.

27 Jul 16 - Micro Dairy completed
We have now completed the Micro Dairy, we can now start installing the equipment ready for the beginning of August which is when the Cheese vat arrives from Germany
